- It's 1 1/2 cups of crushed ritz crackers.
- Lets Go Prepare 2-3 of sweet onions.
- What You needis 4-5 strips of bacon.
- What You needis 2/3 stick of butter melted(for crust).
- It's 2 tbsp of butter(to cook onions).
- It's 1 cup of cheddar.
- It's 2 of eggs.
- Lets Go Prepare 3/4 cup of milk.
- Lets Go Prepare 3/4 tsp of salt.
- Lets Go Prepare Dash of pepper.
- Lets Go Prepare 1/4 tsp of paprika.
It doesn't hurt if you use the famous sweet onion of the South, Vidalia onions, which hail from Georgia. Vidalia onions work perfectly in this recipe and that is why I wait til Vidalia season each year to bake up this cheese and onion pie. Some of the colonial versions of an onion pie also had apples and potatoes in the pie mix. Onions, cheese, and mustard are such good friends and they play beautifully together in this Cheese and Onion Pie.

- Mix ritz crumbs and melted butter and press into a 8" pie pan.
- In a large pan cook bacon..
- Remove bacon and cook onion in the same pan with butter until transparent..
- Stir in crumbled bacon and pour into pie pan over ritz crust..
- Mix eggs, milk, salt, and pepper together and pour over onions. Sprinkle with cheese, and paprika..
- Bake at 350° for 30 min..
- Serve hot..
There is no need for pastry anxiety on this beautiful pie, either, because it is a take on the dead easy hot water pastry and is almost impossible to overwork unlike most pie crusts. Meanwhile, line unpricked crust with a double thickness of heavy-duty foil. Remove foil; cool on a wire rack. This delicious pie has a buttery cracker crumb crust and is stuffed with sweet onions. It is superb along side any barbequed meat -- especially pork.
