Recipe: Yummy Veggie (or Quinoa) Rice

Ingredients of Veggie (or Quinoa) Rice

  1. It's 1 1/4 cup of uncooked white rice (or Quinoa).
  2. It's 1 3/4 cup of water.
  3. Lets Go Prepare 1/2 cup of chopped onion.
  4. Lets Go Prepare 1/2 cup of chopped green bell pepper.
  5. Lets Go Prepare 1 cup of zucchini squash, peeled and diced.
  6. What You needis 1 cup of chopped mushrooms.
  7. Lets Go Prepare 1 tbsp of minced garlic.
  8. It's 2 tbsp of olive oil.
  9. Lets Go Prepare 1/2 cup of grated parmesan cheese.
  10. What You needis 1 tsp of oregano (or italian seasoning mix).
  11. It's 1 of salt & pepper to taste.

Stir in the soy sauce, sesame oil, and sriracha. Push the quinoa to the side of the pan to create a well. Heat oil in a large skillet or saute pan over medium heat. Cook quinoa, rice or couscous according to the package instructions.

  3. Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed..
  4. Stir in Parmesan cheese and extra seasoning if desired serve..
