Butterscotch Ice Cream step by step
- We need to prepare basic ice cream first. Take 1 small bowl of milk and keep it aside and boil the remaining milk in a heavy bottom pan..
- Now in the milk which we separate earlier, add sugar, corn flour, gms powder, cmc powder and mix it well and then add this mixture to the boiling milk and stir continuously to avoid lumps..
- Boil it for 5 to 7 minutes and stir continuously. Switch off the flame and let it be cool..
- Pour it into a air tight container and first cover it with pvc cling wrap and then with the lid. Freeze it for 4 to 5 hours..
- In a pan put sugar, continuously stir to melt it. Add crushed cashews and coat it well. If required add 1 or 2 tbsn water to avoid burning of sugar. Add butter and mix them all. Place it to a plate and let it be cool..
- After that pour ice cream in large bowl and blend it with electric whisker for 10 minutes or until it is double in quantity..
- This is our basic ice cream. Now add any flavour of your choice at this stage. I am adding butterscotch essence and yellow food colour and again whisk it for 5 minutes..
- Again pour this ice cream into a air tight container, sprinkle crushed cashew, cover it with cling wrap to avoid ice crystals, then with lid and freeze it for 5 to 7 hours. Our butterscotch ice cream is ready. Serve chilled and enjoy it....
